“Call me Caramel Corny”

Welcome back! We are going to make a caramel corn, the hard way and easy way and things you can do with 41 marshmallows.

Caramel Popcorn

Ingredients

  • 1 cup butter

  • 2 cups brown sugar

  • ½ cup corn syrup

  • 1 teaspoon salt(optional)

  • ½ teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 5 quarts popped popcorn

Instructions

  • Preheat the oven to 225.

  • Make Popcorn

  • Put Popcorn in EXCEPTIONALLY large bowl and set aside

  • Using a medium saucepan over medium heat, melt the butter.

  • Stir in the brown sugar, corn syrup and the salt.

  • Bring to a boil, stirring constantly for no more than 2 minutes.

  • Boil without stirring or touching for 4 minutes

  • Remove from heat, stir in the baking soda and the vanilla

  • Carefully, pour in a thin stream over popcorn, stirring to coat.

  • Place coated popcorn into 2 shallow baking dishes and bake in the preheated oven, stirring every 15 minutes, for 1 hour and 15 minutes.

  • Remove from oven. Allow to cool completely before breaking into pieces

41 Marshmallow Marshmallow treats

Ingredients

  • 41 Regular sized Jet Puffed Marshmallows

  • 2 Tablespoons melted butter

  • 1 tablespoon vanilla

  • 6 cups of your favorite gluten free dry cereal

  • 1-2 cups of your favorite “mix-ins”

     Instructions

  • Lightly grease a 9 x 13 casserole dish

  • In a microwave safe, large bowl, place 41 marshmallows and put in the microwave for 30 seconds

  • Carefully, stir marshmallow mixture and put back in microwave for an additional 15-25 seconds.

  • Mix melted butter into melted marshmallow

  • Slowly add the cereal, 1-2 cups at a time, ensuring that the cereal is evenly coated until all 6 cups have been mixed in

  • (If you are adding additional items, i.e., chocolate chips, pretzels, etc. add these in between cups of cereal)

  • Scoop mixture into the greased casserole dish, using a lightly oiled spatula, press mixture lightly into dish.

  • Cover and allow the treats to cool completely on the counter before slicing into desired sizes.

  • Store in airtight container
